Asian Marinated Pork Tenderloin

Ingredients

  • 1/2 cup honey 
  • 1/3 cup vegetables oil 
  • 1/3 cup soy sauce 
  • 1 teaspoon ground ginger 
  • 1 teaspoon dried red pepper flakes 
  • 1 clove garlic, minced 
  • 1 (1 1/2 to 1 3/4 pounds) pork tenderloin 
  • 5 Bok choy stalks, cut into 1-inch pieces 
  • 2 green onions, cut into 1-inch pieces 

Directions

  1. In a medium bowl, stir together honey, oil, soy sauce, ginger, red pepper flakes, and garlic. Place pork, Bok choy, and green onions in a large plastic resealable bag. 
  2. Pour marinade into bag and seal. Refrigerate several hours or overnight, turning bag over once.  
  3. Drain pork and vegetables. Discard marinade. 
  4. Add pork to air fryer basket. Set temperature on 375°F. 
  5. Stopping halfway through cooking time to turn pork, cook 25 to 30 minutes or until browned and internal temperature reaches 145°F when tested with a meat thermometer. 
  6. Let pork rest on a cutting board.  
  7. Meanwhile, add Bok choy and green onions to air fryer basket. Set temperature on 375°F. 
  8. Cook 5 minutes, or until desired doneness. 
  9. Slice pork and serve with vegetables.
