Pressure Cooker Pasta with Marinara and Three Cheeses Recipe

Ingredients

  • 2 cups chicken stock
  • 1 lb penne
  • 2 cups marinara sauce (homemade or store-bought)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp nutmeg
  • 1/4 tsp paprika and red chili powder
  • 3 tbsp butter
  • 2 cups milk
  • 1 cup grated Parmesan cheese, plus some to sprinkle on each serving
  • 1/4 cup grated pecorino cheese, plus some to sprinkle on each serving
  • 1/2 cup mozzarella cheese, grated
  • 1 tsp truffle oil to drizzle on each serving 

Directions

  1. Add everything till butter in the Pressure Cooker (make sure your pasta is submerged so add more stock if needed). Next seal the vent and pressure cook for 8 minutes.
  2. Once done, the pressure cooker should automatically go to "warm" mode. Add milk and stir the pasta well to loosen it up followed by the three cheeses, chili, Italian seasoning and truffle oil. If you think the penne is not very creamy, add more milk and stir.
  3. Serve hot with a nice drizzle of truffle oil and sprinkling of cheese.
